Parmesan Crepes in Soup

Yesterday I made homemade crepes stuffed with parmesan cheese and tightly rolled, and topped with hot soup.  This is a soup my Mom would regularly make as I was growing up.  It was always one of my favorites.  It's a simple soup idea....and so yummy .... but the ones my Mom used to make were even yummier!  I sure miss all her good Italian cooking.

Here is my Mom at 80 years old.  She passed away last year peacefully at 90.
